Tell us more! So...Can you ferment, or cure int these casings - then smoke...Or exactly how would you use them Rick?

Ferment (traditional style) you might have a hard time with if your going to smoke them. Heat while smoking after fermenting may kill the fermentation agent. Now a couple days of cold smoking would work (cure 2 style)

I would use ECA for the tang while smoking and use cure 1.
