Shrimp and pork sausage ala 10.5

Decided to try Chris' recipe so here goes:
Defrosted an 11lb butt.


Sliced it into strips to grind, and trimmed about 1.5# of fat for freezing for later use. I'll use about 5# of the ground pork and freeze the rest.



Got the shrimp ready. Had some that were cooked and frozen, and some that were raw. Peeled the raw.


Got the boil ready.


Shrimp out of the boil.


Shrimp chopped up.


Mixed the dry stuff into about 10 oz of leftover boil


Stuffed and ready for smoking tomorrow. In the fridge for overnight.

Gus, If your's turn out half as good as those Chris had at the KOA you will have been successful.  I found out that these are the last you want to taste during a sausage tasting because they over power any others for the most part.  Daggum  they were good.  Dee

we'll have to see how they taste tomorrow. ( the quality control piece was great.)

How did you like them Gus? They taste much better reheated on the grill. I do like to snack on them right out of the fridge too!! Before the sausage police turn on the sirens they are fully cooked to 152 with the correct amount of cure in them so they is good.

They were great. Made a mistake of giving them to a friend and now they keep asking for more.
