Cured up some BBB a few back.

Cant wait as normal. Got the flat BBB out and rinsed off. Letting it water soak for the 2 hours then into the smoker. Going with peach smoke.

Aha, "Buckboard Bacon".  That dark color must be from molasses, I thought it was beef!   :P

As far as I know (and I could be wrong), Buckboard Bacon is bacon made from butt end of pork shoulder.
