After 8 hours it is time to slice it .
i fried 3 pieces ,they are good very much like canadian bacon slightly too sweet for me .
next time i will look for a thicker piece of meat .

Love the color that you got!  If it is too sweet you might eliminate the 1 cup of sugar that you used and just go with the 1/2 cup of Brown Sugar and 1/2 cup Maple syrup that you used.  That is the fun of smoking is you get to tweak your recipe to your own liking.  How does the lamb compare to pork bacon in taste and texture?

Too sweet?  Can't tell from here.  It does look really good, however.  It would certainly be worth trying sometime.

It sure looks good, even if it did come out a little too sweet.  Next time you'll know to cut back on the sugar and it will be even better.

On the texture side it is very similar , taste  is 85% bacon ,but you can taste slightly the flavour of the lamb in the fat .
yes , next time i will cut down on the sugar.
