Title: Hickory Peppered Jerky in a Vacuum Tumbler
Post by: Amazen1 on November 17, 2012, 10:30:44 PM
Made some batches of Hickory Peppered Jerky in my Vacuum Tumbler
20 minutes in a Vacuum Tumbler sure makes Jerky Marinating/Curing easy

Thanks for looking!!

Todd

My New Slicer and Vacuum Tumbler sure came in handy!

Eye of the Round from SAMS Club, before and after it was sliced with my new slicer

I'm using Cabelas Hickory & Peppered Seasoning/Cure mixed 50/50 w/5 lbs. sliced beef

15 pumps with the hand pump, evacuates all the air inside the tumbler

Tumbling for 20 minutes
Notice the color of the meat changes from pink to grey/brown
Most of the 8 oz. of water was absorbed, and the remaining liquid was thick from the exchange of protein from the meati

About 4 hours in my dehydrator @ 165°

I am impressed with the speed of the marinating process in vacuum. What a great timesaver!
