I bought new charcoal today after having “issues” with lighting it yesterday. I wanted to be able to cook the boneless country-style pork ribs on my new PBC tonight. I started earlier, got a nice fire going and hung the ribs to cook. I had coated them with some Peach BBQ Rub from Loveless Café. The rub smelled and tasted really good. Sweet peach with a bit of a bite from some red pepper flakes. I’ll be using this one again! I cooked them for 2 hours. The smaller pieces were very tender. The larger pieces could have stood another 15 to 30 minutes. Here is the finished product.

its great your cooking again my friend. your pork ribs look fantastic. i love peaches. i'll have to get some loveless peach rub. :)
