Helpful oven cooking tip:
Lets say you are going to cook your turkey at 350 degrees
Pre-heat your oven to 450 degrees then place your turkey in the oven
turn the oven down to your desired temp of 350
ANY temp just pre-heat 100 degrees higher first
Why?????
because when a 12 lb or higher lb mass of cold meat goes into the oven, the oven temperature drops considerably
If you are pre heated to your desired temp the temps will plummet when the cold turkey is placed in the oven.

I actually do and did mine starting Wednesday night about 10:00 pm. Started out at 500 degrees and slow roasted after the turkey is placed in the oven and left at 500 for 20-25 minutes them temperature is lowered to 225 for a slow roast overnight.

"Overnight"? When do you think it's at serving temperature?
Using the 500/200 method a 14 lb bird usually takes between 9 & 10 hours. I put mine in at 6AM and took it out just before 4PM to rest (while the dressing went in to bake) - ate at 5PM.
