this is my breakfast today it is called Shakshuka .
it is an Middle East dish.

Fry 2 onions till Transparent .
add 2 cloves of Chopped garlic add fry for 2 minutes .
add 3 Chopped tomatos fry .
add salt, pepper , hot chili sauce ,cumin .
add 1/2 cup water and let it simmer till it thicken .
break 6 eggs sprinkle Chopped fresh coriander or Parsley ..
on a low heat till the eggs are to your liking .
this is my way. you can add bacon ,chorizo ,andouille .

Wow - that looks great! I'm going to do that when the kids have friends over - perfect! Maybe do some warm tortillas to soak up the eggs / juices. Very nice. This would work great on the discada.

A few years back I made several work trips to Poland. Lublin, to be precise. The Unia Hotel there made a breakfast dish that this reminds me of (smaller, individual portion though). They put bacon on the bottom. It was really good with their hot hard rolls and French style coffee in the mornings.

I like the bacon on the bottom. I am thinking to do this on the discada - start with bacon and sausage then add the rest. Warm some tortillas on the edge of the disc.
