Sprinkled the pork tenderloin with a sweet maple rub, then wrapped with maple bacon. On to the Mak to 143 degrees IT.
Made some mashed russets with bacon pieces and the bacon fat ???
No knife required for the pork......fork tender. And delicious.

Have to second Rad's post. That pork looks cooked absolutely right! So easy to overcook pork in this day and age. Constant battle around here. Nuf said!
