We did a 11 lb pork picnic the other day and had plenty of pulled pork goodness left over..what to do? what to do? Wendy took care of this little problemo:
Many things you can do with leftovers, but... I decided to do a tamale pie... I took the leftover pork and re-fried it in a skillet to bring out another flavor layer. approximately 4 cups pork, You then take your choice of Enchilada sauce, I am a tenderfoot, as Scott points out, so.... mine is lawry's.. I added an onion finely chopped , you will need at least a cup and a half of enchilada sauce to add to the carnitas. You can also throw in chiles, or whatever you desire for your tamale filling. While the carnitas and enchilada sauce are simmering...
Create the crust:
2tsp baking powder
2/3 cup all purpose flour
3/4 cup corn meal
2 TBSP sugar
1/2 tsp salt
2 TBSP vegetable oil or oil of your choice
Mix all dry ingredients, then add oil, and incorporate to make small soft crumbs ( I use a fork). Then mix in 1/3 cup of milk and 1 egg till combined, then add 1 can creamed corn, combine and press into greased 9X13 pan, bake for 25 minutes at 400 degrees or until golden brown.
Remove from oven and reduce oven to 350 degrees.
Poke holes in this crust and then layer with carnitas and enchilada sauce. Cover with approximately 1/1/2 cups cheese of your choice ( I used 4 cheese mexican shred)
Return to 350 degree oven and bake for 25 minutes or until cheese and meat mixture are golden and bubbly. ( if your oven runs hot, you might need to cover this with foil for first 15 minutes of cook time and then remove for last 10 minutes... ( I have an electric oven and I did not need to cover at all)
Let cool for 10 minutes, which gives it time to set up and then if desired you can add fresh ingredients such as; lettuce, tomato, green onion, or cilantro.... again whatever you choose for fresh crisp cold ingredients.
