After seeing Ahron's new kabob skewers and what he made with them I had a craving for something similar. With my Greek Heritage this was right in my wheelhouse. I mixed up ground lamb, fresh oregano, garlic(finely minced), onion (finely minced), cumin, ground coriander, salt, pepper, and some lemon juice. Once mixed, I took a small tester and quickly cooked it in a saute pan and adjusted my flavors accordingly, since I never measure. I kept the mixture in the fridge until I was ready with everything so the flavors could mingle.
Next up I made some Tzatziki sauce, greek yogurt (I prefer Fage, a little expensive, but when onsale not as bad, but thickest, and most tard in my opinion), small diced cucumber, a couple cloves of garlic, fresh thyme, lemon juice and zest, salt, and pepper. Some people add dill, I personally am not a fan dill I like thyme instead.
Fired up the Jumbo Joe with Kingsford all natural with two small chunks of cherry wood. While it was heating up I formed skewer like shaped kabobs and popped them in the freeze so my hands didn't warm the meat up too much to keep the ground texture. When the grill was ready, on the lamb went!
I made little gyro bites out of it, but here it is plated with my pita bread, and LTO (lettuce tomato onion) and ready for me to grub.
