The wife is gone helping care for her mom. We had Thanksgiving before she left. I was going to make a crown roast of lamb today, but I couldn't wait and had it the other day. So today I decided to have Surf and Turf. A prime grade rib eye roast and a 21 oz lobster tail.
The participants - the jar of yellow stuff is clarified butter I made for the lobster.
The rib eye was prime grade with excellent marbling. I bought it last week and dry aged it until today. Here it is after I trimmed off the "dry" exterior.
I cooked the roast on the RecTec at 225* until it hit 110* then bumped it to 500* and seared it in the grill grates. The lobster I broiled in the oven. Made some sauteed onions and mushrooms and used a butter warmer for dipping the lobster. Here is the table setting.

The roast was fantastic, melt in your mouth tender. The lobster was great also. I have a lot of meat left, so I'll be making some nice steak and pepper sandwiches the rest of the week.
