So in memory of Phil's passing I decided to make some butts using Awake-A-Steak. As Phil told me it is good on other things besides steak.

Started with a package of two boneless butts from Costco...





Appears that two turned into 5 small butts. Guess the butcher did not know when to stop cutting...



Time to break out the IG and Molasses...



Liberal coating of IG...



Now for Molasses...



AMZPS loaded with Hickory...



Into the Memphis pool at 180F...



See you in a few hours ;)

 Looking good my high desert buddy  :)   Never thought of using awake a steak for pork...but now that ya got me thinking about it...........

Phil sent me 6 different kinds of Instant gourmet. There is a jerk in there too..I should go get a roast ..is it called a roast now? and do one in each flavor..probably won't use the seafood one on it tho.  Pam .☆´¯`•.¸¸. ི♥ྀ.

Sounds great Muebe. I've never got a butt from Costco Jig sawed up like that. Hope that's not part of the new scheme of things Lately, Givem less but make it look like more and jack up the price  :)

I haven't done a butt with it, but I use it on chops and it is a lot better on pork than it is on steak.  (And it's pretty darn good on steak.)

First two are off and in FTC. After 8 hours they reached a IT of 200F. Just waiting for the others...

What a great deep color those took on. Are you worried about the bark getting soggy setting in the foil?
