Ribs On The PBC, Bronto Ribs, That Is

I saw these at the grocery store the other day on our way home from the OBX.  They looked really good, and I need a serious PBC fix!  I rubbed them with some Canola Oil and Way Out West Rub, with a touch of garlic salt.

Off the PBC and ready to serve.  They not only looked good, but they smelled good, too.



Oh, yes!!!  They tasted really good, too!!!  No leftovers here.  With just the two of us, we polished them olff, quickly. 



If I ever served these to company, I would need at least one rack per person.  Good eats!!

Dooley’s Espresso Cream Mini-Cheesecake Dessert

I forgot to post the following pictures of our dessert after eating those bronto ribs.

I made two changes to my recipe for the Dooley’s Toffee Liqueur Cheesecake that I made for the KOA Gathering a while back.  I used Dooley’s Espresso Cream Liqueur instead of the Dooley’s Toffee Liqueur and I made them in a mini-cheesecake pan.  Other than that, they are very similar to the full cheesecakes I have made previously, Oreo crust and all.



Here is my dessert, a Dooley’s Espresso Mini-Cheesecake with a little Dooley’s drizzled on top with some crushed chocolate from my supply of Wiseman House Sipping Chocolate from Hico, TX.



What a nice way to finish a meal.  I think I will have a little Dooley’s Espresso Cream Liqueur to top it off.

...must not look at food pics.  I cooked my last pack of beef ribs two weekends ago.  Those do look good though.

Ac, how about your cooking times? Did you wrap? I've been using a rib rack on the grate for my pork ribs. Like to try some beefs, if I can find some semi meaty ones.  ;)
