Getting the Mission Grill greasy

What better way to get a grill broken in that with a pork butt. Wendy rubbed it down with some Pork Stank last night.
Here is the setup for indirect cooking. Got some Stubbs Texas Roadhouse wood chip blend for some early smoke.


Got the pork butt on.....lets see what happens

Good way to start breaking in a new grill.  Did you inject anything?

Now that is what a grill is supposed to look like.  Those shiny,  clean,  sanitary looking grills do nothing for me!  Lol

The Mission Grill worked very well. I started with a little too much charcoal and the grill topped at 300....no biggie. Added about 8-10 unlit coals about every 2 hours and the grill ran pretty steadily at 250-275. The 8 lb butt was at 195 internal in 7 hours. I even had time to work with Wendy over at our house to get it ready to paint for the sale later this year.
