I decided to do my first brisket for Christmas dinner this year. I figured I couldn't mess it up too bad on the PBC. I put it on the grill grate until I got the bark I wanted then wrapped it until it got to 210°. I unwrapped it and it shook like a bowl of jello. It pretty much fell apart. I'd say it was a success! Very nice! I've cooked a lot of stuff on the PBC, but never a brisket. It's a great cooker to have in your arsenal.

Nice job

I still need to try a brisket. Yours looks fantastic.

Perfect for Marcia and me. That looks like the kind of bark we prefer.
I may try to duplicate this cook.
- What PBC temp and for how long before you wrapped it?
- Then, what PBC temperature while wrapped?
- Did you put anything in the foil with the brisket?
- About how long for the overall cook?

It looks mighty good from here...

Nice cook. I saw some good lookin' briskets while I was out yesterday. Should have picked one up.
