The chicken thighs were massaged with mayo and then doused in Mo' Rockin'. After dinner with our youngest, the two thighs that were left went on a couple bolillos tonight, that were drizzled with evoo, a few slices of tomato, and a slice off a hunk of blue cheese. Into the broiler! Served with a side of red beans and rice. Oh yeah! Quick, easy, lots of flavor....a great Monday night meal!
