I sent my poached egg results to my youngest brother (well, actually the pictures...) He said he'd forgotten how delicious a poached egg could be , so took out his fancy (stainless 1 quart) pan, some water, vinegar, salt - didn't measure anything, put the eggs in and gave it a swirl. After a boil and rest (he has the details, I don't) here you go....
I asked him why the yolk was running over the toast in the second picture. He said it was because he put his snoose can under the plate to raise it up for a better picture.... ;) ;D ;D
I am encouraging him to join the forum, I believe he would enjoy it.

I usually get a request to make poached eggs on Sunday mornings. We love poached eggs around our household. If I had enough Hollandaise sauce I would be trying to make different variations of Eggs Benedict.

Good job! I love poached eggs but very seldom do them because its easier to just flop eggs in the skillet after the bacon or sausage is done. Thanks for posting ;D

Making proper poached eggs is not easy!
That is why I just make my eggs over easy in a skillet ::)

Down here we sometimes make a "bullseye". Try it....
A slice of bread ; cut a hole in the middle.; heat your skillet with a hunk of butter and put the bread in; drop an egg into the hole and cook to desired doneness, flipping about halfway through. You have your toast and egg.

My wife made that for me when we were dating and throw-out the years. She called them "An egg in the nest". I haven't had one in years and now I want one.

Jack,I grew up calling that "toad in a hole", my wife calls it "hen in a basket". I made it for breakfast yesterday.

I think it is "Crabs We Got'em" or something like that. It is one of the Maguire's restaurants I think. I know it is on the Sunday brunch menu.
