Title: Turn About is Fair Play

So many nights, I prepare dinner only to find out everyone made other plans without telling me. The most recent debacle involved a SV chuck that had to swim for its life for too many hours and then tried to survive in the fridge.... even Roscoe wasn't interested in the result...  :'(

So, yesterday, my wife put some chicken in the crock pot before leaving in the morning. Then she called and said that Rocky's gymnastics banquet was last night - not Thursday as we expected... ooops! So, this time her dinner went in the fridge...  ;D ;D

Put it back in the crock today and made some mashed potatoes and some excellent carrots (from Jaxon) to go with the chicken.  I normally like to roast or grill my carrots but the recipe from Jaxon looked interesting. I gave it a shot. It was very good and the girls scarfed them down - a perfect thumbs up. Thanks, Jack!

I have to add - I put this plate together and then gave it to my oldest daughter - Emma. She was so pleased and grateful that I made her plate. But then Rocky pointed out it was so I could take a picture... yep I was busted!

The chicken and taters look great.  AND you've convinced me. I'll be giving Jaxon's carrots a try real soon.

Oh yes, the joys of cooking for a "mobile" household.  I remember the "short-order" dinner approach from years gone by.  I am convinced that this was a test on my time planning skills, not to mention my patience.

That was one of the reasons I initially avoided SV - I am always shooting at a moving target. That's fine with my old Browning, but not so good when I am looking at a meal 3 days from now - who knows what will be happening? Yes, SV gives some lee-way, but as a recent attempt proved - not enough. I am not giving up - will just try to work with shorter swims for now.

It is all fun!

BTW - here is the link for the carrot recipe that Jaxon sent me - very nice, but be careful not to let them over cook and get too soft. http://www.chefsteps.com/activities/caramelized-carrots

I am going to mess with this recipe a bit (I love carrots!) - stay tuned.

I've not tried orange juice I like the bite from lemon or lime to waken things up. I'll give the orange a try. Thanks for the idea.

Same here, makes it real convienient with an iPhone, it's almost always nearby and handy.
