Ribeyes and brisket, but neither will be on the pooper.  I'll probably do something in the pellet grill, but I am not sure what...  :D

I usually don't cook on the 4th. We go to the local St Joseph annual 4th of July picnic. We get some greasy fair fries w/malt vinegar & salt then go to the little red barn and get double whole hog sausage sandwiches w/cheese mustard and onions, some lemonade and set and indulge! When the kids were little we stayed the evening for the fire works. The wife played bingo and I played show down poker and drank beer! Don

4 racks of bb back ribs, 1 butt, 1 chuckie, vege lasagna, hot dogs wrapped in bacon, abt's w/ pineapple in them, grilled corn, green sticks, radishes, grilled pineapple and homemade sweet biscuits for dessert and homemade hand cranked peppermint ice cream (fresh peach too if I'm real good).  cooler of FT on the side for the cook.   ;)

I don't even know what I'm doing that day. I think I'll thaw my brisket  from the deep freezer.
