Title: Not 100% sure what to do with this

Saw something new at Costco today. So naturally I bought it. Saw another one of those $3.79 Prime packers too.???

So I bought this

Is this basically uncured and unsmoked bacon?

Any suggestions for uses?

Yep Pappy you might be in the bacon business soon!
Although my Italian grandma used to fry thick slices of pork belly served along with eggs and toast on Sunday mornings. Tasted great!

That's just raw bacon.
Go half asian with it
Sous vide then brown it, do a caramel sauce with Vietnamese fish sauce, rice vinegar, brown sugar, fresh ginger and a bunch of garlic.

Or Porchetta on PBC or Sous vide

Bacon - or any of Biggs recipes....Man, you better go back to that store and get more meat! ;D What a hard choice..... ;D

I used to buy fresh sliced side meat at my butchers and fry up for breakfast. You want it thick sliced, 1/4 inch. I liked a cold sandwich with some too. Biggs gave you great ways to use it. There are a lot of recipes for braised pork belly too that look good! Don
