Title: Slow n Sear for kettle grills

I just got this gadget today and I'm deeply in love with this thing.

I did reverse seared burgers and it held 250 for the slow cook and then ramped up close to 500 degrees in no time flat.

I couldn't operate the camera and flip at the same time coz it got red hot.

After that I still had a few coals left so I tossed a couple of sweet potatoes coz my youngest loves sweet potato mash. Stayed at 350 for 2 hours.

Added a few more coals for wings

I just spun the whole grate and got all the wings to wear. Look at the flames under there.

If you have a kettle grill I recommend getting this thing.

It has a spot for holding water if you are into smoking with steam involved. Ridiculously easy to dial in temp

What a clever idea! I love charcoal baskets & made one for my kettle , but I like theirs better!
The good, looks like it'll hold a lot more charcoal than the weber baskets .heavy 304 SS should last through several kettles.easy to reload.
The bad , I think the water trough is wasted space. The cost $88 shipped is pricy ???
I can make the same shape out of expanded metal for $12-15 if you don't count the ER visit the last time I made one.  :o

I very well remember that LA. I have a all new respect for expanded metal. The water holder is going to need constant refilling due to its size. I wonder if I can get that into my PK Grill............. ::)

I had heat in the grill so I decided to bake......calzone at 500 degrees, no problem.

Heck, The Spark would've spent the money on something BBQ related anyhows.
If I worked at a BBQ store, I would probably end up working there for free by the time I paid the store back every two weeks   8) 8)

Thank you! And way too easy to light. That was cooked at a steady 400 degrees, no turning or flipping.

I've never used the stock grates. I bought the cast iron grates same day I bought the grill 5 years ago. I love them

Everything looks great..I want some of them grate for mine. I use the ones that came with it, but I do cook indirect like you do, I have the charcoal holders like you have and a vortex and boy do I love them. Watching how you load your grill.  .☆´¯`•.¸¸. ི♥ྀ.

Doing some kalbi with Costco boneless short ribs. Burnt mesquite wood for the fire

Put something together very quickly after I realized that the Kalbi won't go well with ceasar salad LOL.
something like:
 
A tablespoon of vietnamese fish sauce
Juice from one lime
about a tablespoon honey
a squeeze of thai sweet chili
about a tablespoon of macadamia nut oil
a dash of sriracha.

Shake it all, taste and adjust.

I make stuff up all day everyday. Recipes are very confusing to me
I cook indirect heat every time so the SnS was a no brainer. I opened the box, took out the SnS and threw the box in the trash.
I have no idea whether it comes with a manual or recipes. LOL!!

If you have a kettle grill, get yourself this SnS.

I love the grate. Even use it in my WSM 22.5. Takes a little effort in maintenance (I spray it with oil after cooking, while still warm).
I've had it close to 5 years now.

Do you start your wood splits the same in the chimney as you would briquettes? I have been trying to use just wood chunks a lot more, but feel I need to have some, a hand full or two... maybe 10 total briquettes to help get it started.

Never heard of Western fire startes..got a pic? I use the Weber charcoal starter which are lil white cubes. They work great, just have to make sure they are burnt before you use the charcoal which is no problem. I have the curved baskets from Weber and I like them..also using a medium Vortex which is doing the same without the water pan added. I do like your S &S a lot tho. I cook indirect all the time too. I learned not to turn the food with a spatchcocked chicken.  .☆´¯`•.¸¸. ི♥ྀ.

I used to use the weber cubes as well then I tried these. They flame for about 20 minutes, perfect for logs.

Beautiful color on that cherry wood cooked chicken. Got any pictures of it after you sliced into it? I have found that cherry gives the nicest smoke ring, and overall color to the outside to.

What I'm asking is about the top and bottom vents.  Do you leave the top vent all the way open and try and control temp with bottom vent?
Bottom full open vs half open or quarter opened will yield about what temp?
I know there are a lot of variables, that's why I said a general rule of thumb.
Any suggestions?

I pretty much leave the top vent open and control temp with the bottom. The only exception would be if I let it get way too hot and needed to cool it off quickly.

But, I'm sure there are others who control using the top vent in conjunction with the lower.

It boils down to you experimenting with different techniques and determining what works best for you.

At the very least you could use that space below the grate for cooking up a big pan of baked beans while the your doing some ribs on the main grate.

I've never cooked under the grate but it's feasible. You will most likely need to keep the water reservoir full.

I keep my bottom vents halfway open and control temp using the lid vent. I do this with WSM as well.
I marked vent positions when I found my sweet spot.
