Lost the great cajun chef today at the age of 75. I always enjoyed him.

That's bad news! He was quite an innovator! Brought blackened foods to the forefront!
I have a few of his cookbooks.....good stuff!

Always enjoyed watching him cook on TV. Hate to hear he is gone.

Met him about 35 years ago when he cooked at a fundraiser in NOLA.
In those days K-PAULS stand in line , sit continental style , & a very limited menu!
Last went about a year ago .
Paul was a poorly controlled diabetic & I'm sorry to see him pass at a realitively young age :-[

He was very inspirational, and I always loved watching him cook. If you enjoy "Blackened" Fish, Steaks, etc., then you have Paul Prudhomme to thank for that!

We need to stop and think and thank God for the chance for us who like to cook that we have been so fortunate to have been exposed to such great and varied chefs/cooks such as Chef Paul, Justin Wilson, and more who are with us today. We have such a chance with YouTube to watch them in such a way that could not have been dreamed of twenty years ago. Dee

Come to think of it, when I was a night prep cook at a hospital...they had a large tub of one of Prudhommes seasonings that we used all the time. I do not re-call which one it is. Probably the first "commercial" seasoning I had ever run across besides Lawrys Seasoning Salt................

He reintroduced Cajun and Creole cooking to New Orleans. Before he came on the scene all the major restaurants were serving French or other European cuisine. He brought the cooking he grew up with back and made it popular. He invented the "blackened" style of cooking and if you have never had a freshly caught redfish blackened you need to do it as soon as you can. He took what was considered a trash fish and made it one of the most popular dishes in the country.
