Title: Ribs on the PG24LTD

Another 3 slabs going down today for a little party tonight. This is my third pork rib cook on the pellet grill.

These ribs are from Costco.  Purchased yesterday, trimmed and seasoned with a mixture of Salt Lick dry rub and Brunkens BBQ rub.

Then vac-packed for about 20 hours in ice box.

Ribs are now resting on racks, coming up to room temp for the smoke.

Today I decided to smoke on the low smoke setting. I think it's producing a better intensity of smoke at this temperature.

My going to go an hour on the low smoke setting. Then move to the high smoke setting.

Another aspect of the intensity of smoke. I got smoke coming out of the drip outlet too.  There is a 5 to 10 mile an hour breeze today. So I'm going to set up my probe and made sure the temperature over the duration of the cook

Very nice looking ribs.  I'll take a plate or two.

I'm relatively new to pellet smoking too and just to add what I've experienced...I find going with the lowest setting produces the most amount of smoke. So if you like a heavier smoke leave it on that setting for a longer period of time. I tend to run at 160 deg for around 4 hours before cranking it up to set the sauce

I like the way you prepped the ribs by applying the rub then vacuum seal.   Do you do that a lot?

Can't argue with the results.  They look mighty good!

With ribs, I prefer the vac-seal as I can get all three slabs in one package. The ribs were consumed by smiling guest.

Note: I'm using cookinpellets "Perfect Mix", but just ordered 40# of 100% hickory, which I will use on my next rib cook.
