Title: J. A. Henckels Sharpening Angle Question

Hello, I believe I have the Henckels Four Star series knives. Does anyone know the sharpening angle I should be using?

12-15 degrees is common for Euro knives.
But yo may want to search the site here for a great product review and thread about a sharpener that Dee bought...It allows you to re-profile knives if you desire - and change the angle to the Japanese angles - which are steeper ( 10 degrees...If I remember correctly..?)

I have the same knives and I am pretty certain they are 20 degrees.

I emailed the company awhile back for the information as I was looking to change mine to 15 degrees.

I was speaking past tense. They did respond with 20 degrees. So go for it!

You can trust Pap - he is almost Canadian. Well... he thaws out for about one month more than you guys above the line.... ;) :D

I've been sharpening my Henckels with the Ken Onion belt sharpener I received for Christmas.  It does a great job and it pretty dang quick to bring on a great edge.

This sharpener is adjustable
