X2 on the Chicken........I think you have a great idea Tom with those trays you use. I see you use them often. Quick question if I may  are they food safe....sounds funny to ask but it is amazing how many things slip by

I think so,,, after i use them with raw meat on it to transport to the grill I always wash with hot water and soap before I use them again. Been using them for years with no issues. Bought them at Restaurant Depot  :)

Those looks good Tom.     Ever try peach juice or pineapple juice injection?

  I do the injections just before I place them on the grill really work well.
