Today was the first day in ages it seems, that I didn't have a long honey-do list for the holidays, new family arrivals time, work, work, and more work! So dabbling in a couple hobbies, watching some football later, and smelling this concoction cook all day! ;)
Started with 9 csr's, coated them with evoo, then a sprinklig of coriander seed, rosemary, thyme, and black pepper. These were browned in batches of 3, in hot organic lard. Nextup, there was all this flavor in the bottom of the pan, the frond, that I wanted to utilize. So I tossed into that pan 2 sliced onions that would sweat and loosen up all that great flavor. After a good stir, some drained kraut was added, 3 csr's, more kraut, 3 csr's, more kraut, the last 3 csr's, the rest of the kraut to cover and apple wedges on top. Lastly, a bottle of Fat Tire went into the mix to keep everything moist! 8) The lid went on, with burner on low and later tonight we will see where "trickle-down-effect" actually does work! ;)

Country Style Ribs....I think these are slices of a Boston Butt that have a portion of the bone in each slice.

Tim is correct. These were from slices/slabs cut from a butt.
Gus, csr's come boneless and with-bone. I much prefer them with-bone, as they are much easier to cook and remain tender more than boneless.

Some are boneless and some are bone-in. It depends on what part of the pork butt they were cut from.

In my neck of the woods the bone-in slice of a pork butt is called a pork steak. The CSR's around here are always boneless and much thicker and shorter.
