Title: Pulled Pork on the 2 Star

Smoked 4 pork butts from Costco on my 2 Star today.  Tried a new method that I read somewhere (could have been here).  Cooked at 225 F for 3 hours, raised temp to 325 F until internal temp of 165 F.  Double foiled then cooked until internal temp of 195 F.  FTC for 3 hours then pulled and vacuum sealed.  Took about 8 hours total on smoker (some finished before others).  Usually I would cook on 225 F until IT of 165 F then foil and continue to cook at 225 F until internal temp of 195 F.  That would take anywhere from 11 to 16 hours.  This new method was much faster and I didn't notice any difference in taste or tenderness.  This new method will be my new way of cooking the butts.

Fantastic cook!!!!! I must confess though, I've tried the method you used, I and I find that I prefer the low n slow method. Both turn out a really good end product. But for my tastes, I prefer 210-225 for as long as it takes. Sometime up to 20-22 hours. Plus the smoke wafting though my backyard is kinda like aroma therapy for me... :)

I like smoke pull pork and roasted pork and yours look mighty fine indeed.

Looks good!  But all those leftovers are gonna make it hard to come up with an excuse to go smoke something else.  ;)

it looks great - fantastic cook - now my mouth is watering for pulled pork. 

I like to do the small packages of vac sealed for the freezer too - I make them about a pound each - just right for the bride and I for a quick meal.  I also find it works well to just throw the vac packs in a pot of boiling water to heat them up.
