After the prime rib and stuffed potatoes on the weekend it was time for healthy again.
The wife trying out the new Spiralizer.........

Got my mise en place.............
Olive Oil
3 Garlic Cloves course grated
2 Tbs Lemon zest
1/2 tsp. Pepper flakes
1/2 lb tomatoes chopped
3 Zucchini
juice of a Lemon
Basil leaves
salt and pepper
Parmesan Cheese (optional)

Heat Olive oil, Garlic, Lemon zest and pepper flakes in a pan for 1 minute
Add Tomatoes and Zucchini and cook another minute or two
Add Lemon juice, Basil and salt & pepper and heat then toss to combine
Top with Parmesan and serve
I thought I hadn't made enough, but it was filling.. It was very good, plus you could taste each individual flavor.
A keeper for sure.

I'll take a plate, but no Parmesan for me please! :)
P.S. I've been keeping the core from the center of the spindle, and the end pieces to chop up for salads. Almost no waste that way. ;)

All them leftover parts work real well in a bag in the freezer for stock too.. .☆´¯`•.¸¸. ི♥ྀ.
