Title: Rib Quest #5

Still using spares.  I have cooked 3 other racks of spares to get here.  Practice makes perfect.  Still the same temp, rub (i used my voodoo rub on 1 rack.  I am loving this Kosmos killer beer honey rub).  I did change my foil time from 1 1/2 hours down to 1 hour.  Same time at the end.  Made a huge difference in appearance and texture. 

Temp 250°.  3 hours naked, 1 hour wrapped with blues hog Tennessee (love this stuff) then unwrapped for 15-20 minutes (enough time for a FT) to tighten up and a thin layer of blues hog regular sauce.  Very pleased with this one.  Color and texture to me is a huge factors when I cook ribs.  If the color is not right. No bueno.  There is a very fine line to get the just right texture in a rib.  I don't know, maybe I'm to critical on myself.  I know what I'm looking for though.  I'm getting there.

All in all a good cook.  The next few cooks will be on a new smoker.  It's showing up this morning.  Only two ppl on this forum know what it is.  Hope my wife doesn't get mad.  I will post some pics later.  It will be a new way of smoking for me.   8)

You do know how to live on the "edge" with your smokers.  I seem to recall a conversation both our wives had about our smokers when we met in Reno last year.

Being the rib whisperer that you are - any advice on baby backs?  My Daughter has requested baby backs for her birthday this Saturday.  I was planning on a 3-2-1 method that I have used but maybe this would be better????

Baby backs I know really well.  275° / 2 hours naked / 2 layers of foil (1 tablespoon of butter cut up in 4 pieces, honey and brown sugar) on top of the ribs / cook 1 more hour wrapped Boone side down ( enough time for 2 FT's) then unwrap and pour the foil juices over the ribs when you put them back on the smoker.  15 - 45 until toothpick tender.  Let cool a little.  Cut up and enjoy. 

Ok, 1 rib lesson = 5 bucks.  Pay it to the forum (tee).  And now we are square.

Thanks for the post....I will certainly try this method, being new to grillin, done a few ribs...nothing to write home about.... :D
