Title: Low fat chicken rolls

Made chicken breast rolls today in my blender. Chicken breast 3lbs, water 2 cups, salt 4 tbsp, dry milk 3 tbsp and UMAi soppressata spice blend. Used my Oster blender to make emulsion with half the chicken, mixed emulsion together with cut pieces and stuffed into fibrous casings. Cooked in oven at 170F for 4 hours until internal temp got to 165F. I don't really like chicken breast because it is a bit dry and lacks flavor, but this turned out tender and flavorful.

What great way to enjoy a leaner snack...for those that are trying to shift how they eat to more chicken. Great idea and great sounding recipe.
