Title: Chicago Deep Dish Re-Re-Re-Re-Revisisted

We make this a few times a year. After seeing KJR's post, it reminded me that we hadn't made one in some time. My wife makes this, I didn't do anything other than cut, I mean slice, the cheese ;)

It's not the same recipe KJR uses but I imagine they're pretty darn close. We put pepperoni, sausage and bacon on ours. We cook the pep a little to render grease from it and we also precook the sausage for the same reason. When we don't, we end up with a very greasy pie. The bacon is also precooked.

We used to use pans but found that a springform pan makes it easier. She's gotten pretty good at making these I'd say!

I cannot use a springform pan with my deep dish pizza recipe as the oil in the dough would leak out and cause some mayhem in the oven.  Learned that one the hard way.

It shouldn't be the oil in the dough leaking out but I'll take your word for it! I bet the sausage is your culprit though. We used to have that same issue that's why we started precooking meats and draining them very well. Your method is obviously working though so keep up the good work!

I like to use my cast Iron frying pan for pizza. Not big on deep dish but the pan sure can handle it if thats what you want. :)

You can stop that if you cover the bottom and sides in aluminum foil. just sayin..I prefer cast iron.  .☆´¯`•.¸¸. ི♥ྀ.
