Those look great, Tom ! ! !

I do something similar.  I call it the "Pork Trifecta."  I stuff the tenderloins with Italian sausage, sometimes adding diced peppers and onions.  Then I wrap them in prosciutto, mainly because I'm Italian but also because I think it crisps up better.

Looks really good. I hang my turkey almost the same way without a basket.

I love hanging stuff in the Beesr and SRG..I have hooks and a rotisserie rod that I used for years. First thing I ever hung was ribs...☆´¯`•.¸¸. ི♥ྀ.
