When we do cool cooks for the MAK 2 Star review we are posting the recipes in the MAK as part of the review.
I will also post them here in the recipe section. Even though they are cooked on the MAK, the oven works great.......just no wonderful smoky flavor.
GREEN ENCHILADA CASSEROLE
SET MAK GRILL TO 350 DEGREES
ASSEMBLE ALL INGREDIENTS
4 CUPS COOKED SHREDDED OR CUBED CHICKEN
1 CAN CREAM OF POBLANO SOUP (IF NOT AVAILABLE IN YOUR AREA, YOU CAN USE CREAM OF CHICKEN SOUP)
1 CUP SOUR CREAM
5 0Z CAN DICED GREEN CHILES (MILD)
12 COUNT PACK CORN TORTILLAS
4 CUPS SHREDDED CHEESE ( I USED COLBY JACK, BUT YOU CAN USE CHEESE OR MIXTURE OF CHEESE OF YOUR CHOICE( SHREDDED)
** SPRAY 9 X 13 BAKING PAN WITH FOOD RELEASE SPRAY.
IN MIXING BOWL, COMBINE ALL INGREDIENTS, SAVE 1 CUP OF SHREDDED CHEESE ASIDE TO TOP CASSEROLE.
LAYER 4 CORN TORTILLAS ( OR ENOUGH TO COVER BOTTOM OF PAN)
SPREAD LAYER OF MIX, ALTERNATING CORN TORTILLAS AND THEN THE CHICKEN MIX AGAIN. LAST LAYER IS CORN TORTILLA AND THEN SPRINKLE WITH REMAINING CHEESE.
BAKE AT 350 UNTIL BUBBLY AND GOLDEN BROWN ON TOP, THE MAK REALLY GIVES THE TOP OF THE FOOD A NICE WOOD SMOKED LOOK.

I served this to the patients last week and the Boss was so impressed, she is having it in the cafeteria this week!!!

As promised, we did this dish in the cafeteria today as one of our lunch entrees!!
You can tell we are in the South, you can see the fried okra on the left and the sweet cornbread on the right!!

We have pretty good grub. Yesterday was hand breaded chicken fried steaks with homemade mashed taters and white speckly gravy.
every Friday is our Catfish Fry. We make seven hundred bucks plus in 2 hours. The plate is 3.49 Nice haul.
Breading for the Catfish is corn meal with onion and garlic powder and a pinch of Kosher Salt. Delish stuff for sure.
