Hey, my Wife Michel's son Tony [Army Blackhawk Crew Chief], lovely wife Emly are bringing baby Isla [7 months] down for New Years. Our House New Years Eve and up to Chele's Mom's [withOUT] me cus they are having Cabbage. lol I HATE THE SMELL!!!!


But I digress...
Tony wants Brisket and I have the menu filled with stuff not on my big smoker. So what does a guy like me do? Borrow a buddy's Electric Brinkman Smoker for fun! Can I get my competition flavor on an Electric cooker? We'll see!

Ya might want to bet on me.

Mike my smoker is a 20yr old NewBraunfels vertical charcoal water pan smoker
last year I took the charcoal pan out and replaced it with a Brinkman electric smoker replacement element - perfect fit
it doesn't have any temp control, but it runs at a pretty even 200°
I just add wood chunks to the little metal pan on the element about once an hour
I love it - great smoker

Capt. Jack - I'm pretty sure you've answered this before but those lava rock at the bottom of the smoker are for retaining heat, correct?  Was that your idea?  good thinking.

And wouldn't it be great if that had a "Dutch Door" so the smoking compartment didn't lose heat and smoke when you had to open and add wood chunks?

Barry yes the lava rocks act as a heat sink under the element,
then I have a 14" Lodge(Academy) round griddle just above the wood chips as a heat sink
then the commercial cake pan for a water pan sitting on the griddle, it also works as a heat sink
between the 3 heat sinks I get pretty fast heat recovery every time I open the door to add wood.
for years I have been wanting to take it to a welding shop and let them cut a small door in the bottom of the big door just so I can add the wood. one of these days I'll load it up and take it somewhere to get it done, but it does an excellent job now.
what makes the biggest difference is the electric element, it brings the temp right back up to 200° in usually less than 5'mins

You could drill a hole and mount a Smoke Daddy on that...   Lots of good clean blue smoke, and no messing with the door.

I use Fire Bricks in my Bradley electric box, and in the belly of my Traeger.  Excellent heat retention. (and ballast  ;D)

Maybe instead of cutting a door there's a simple metal screen you can instal on the inside that creates the heat shield ... hmmmmm just thinking out loud.

I've wanted the little wood chunk door for as long as I've owned the smoker
just never got around to hauling it somewhere to get it done
(gettin' lazier in my older years ;)
it has worked so well since the electric element and the griddle for a heat sink
it doesn't bother me anymore
..but one of these days ;)

Since it bounces back to temp so quickly I wouldn't do a thing to it.....just sayin...........

The reason I am cooking on this one from my buddy Mark is I cooked so much in my CB Double Chef well I knocked the bottom outta that thang. Hey it lasted like 3 years and that's pretty good with me beating on it.
