I really like your garlic and herb cheese idea. I've always used plain cream cheese. It'll improve my next batch.

I will sometimes mix a favorite rub in my cream cheese that is stuff the ABT's with. Whatever you like - but I would caution again the highly salted ones...( But that is probably just my warped taste buds :D )

the best tool I have for cleaning the seeds & veins out of peppers is my grapefruit spoon
We just use a regular spoon, but I can see how that grapefruit spoon might work better. I'll have to pick one up and give it a try.
