Title: First Chicken on the Traeger Junior

We decided to have chicken for dinner so thawed out some legs and thighs that I got from Costco.  I really like the Costco
selection as the ones I buy are already in the cryovac packaging and sell in serving sizes. Chicken was salted and put back
into the refrigerator for about an hour.  It was then rinsed off and back into the refrigerator for another half hour. 

I seasoned them with some EVOO and Simply Marvelous Pecan rub, and then put onto the preheated Traeger.  I used
Lumberjack OHC mix tonight.

They were cooked on the medium setting for about 30 minutes, and then I turned it to high.  It was quite windy out tonight
and the highest temp I could get according to the hood gauge and my oven thermometer was 375.  Here they are done after
another 45 minutes in the cooker.

Plated with some coleslaw and potato salad.

This undoubtedly was the best chicken I have ever grilled or smoked.  It had a light smoke flavor and the skin was actually
edible this time!  Of course I helped that along with the earlier salt bath and the finishing touch of some “blue bottle”.  My wife
also stated that she really like it cooked this way and why did I wait so long to get a pellet grill! Go figure…

My Grid Iron was shipped last Friday and the last time I checked it had left Memphis at noon and was in route to Atlanta.
Hopefully by the end of the week I will be breaking it in!

drumstick, thigh, wing.  milk on side.  going to need a few paper towels and some elbow room.  i like it.   :)

Your first chicken looks excellent! Nice job. That was my first pellet grill. Great little cooker!

Nice color on the chicken, looks good!!! Try brining the chicken, I do pieces for 2 to 4 hours and halves or whole chicken overnight and I like air drying in fridge 2 to 4 hours. I love chicken on my Traeger and the Gridiron looks like a great smoker! Don
