Title: Sour Dough Starter Kit
Post by: hikerman on December 31, 2013, 04:49:06 PM
One of the Christmas presents my dearest got me was a King Arthur Flour Sour Dough Starter Kit. This is a crock container and lid to keep/store starter in, and starter, which is a descendant of a starter started over 250 years ago! Pretty cool! I got this a week early because it needed to be fed within 24 hrs. of delivery. It is truly like having another pet as it requires thought and feeding once a week. Well I've shared the starter already, to one of the BILs, he made pancakes with it and said they were killer. Life has been a blur so I haven't used mine, until Sunday night. I started an all starter batch of bread using no yeast. It is refrigerated for a long rise after a long rise at room temp. Today I baked two loaves of this extra-tangy bread. Came out pretty good. We will try it later this evening with snacks, smoked cheeses, salamies, and shrimp and grits!
I might be back later, but if not, we are hoping everyone has a Fun, Safe, and Happy New Year!

I'd love to be able to successfully do sourdough - have tried it several times but it never turned out.

Bread looks great, hikerman!

Very cool!  I love the taste of sourdough and especially the dense chewy bread it can make.

Your sourdough will be unique, because of where you live.

Nice to see other people getting into bread making. Some of us who also belong to the bradley forum have been lucky to score some of Sonny's sweet bread starter. To me its more like a Easter bread my mom used to make, perhaps because of the sugar you add to it. I got a good batch from sonny about a year ago and its been going strong. If I'm not into making any bread for a while I just freeze it in one cup jars till I am ready for more bread. I have even perfected dehydrating it to store for shipping. There have been accidents where they can explode from the gases  ;D and the border guys don't like that.

Congratulation's on your Sour Dough Starter Kit. I am sure it will give you a lot of good eating bread.

I tried to make sourdough starter from scratch... it didn't work!

That's why I'm a chef and not a baker <lol>!

I really don't have any suggestions other than you have to be patient when you try bringing it back to life. It might take two or three feedings to get it going again but so far it has only taken me one feeding to get my starter going. I just put mine in mason jars and off to the freezer for storage and later use.

Thanks Smoken..I will try that..specially in the summer when I'm camping..That seems when I lose interest for a while. Can't leave it at the campground..too hot and hubby won't feed it..go figure.  Pam    ☆´¯`•.¸¸. ི

I have used several sourdough starters in the past, and it's one of the sturdiest ones out there. Not picky about precise measurements or feeding times.

Also I am almost ashamed to say that the Bread Knife they sell on that sight for $11 outperforms the one I spent 90 bucks on!

More sourdough loaves on the way! In the first pic, the dough was removed from the refrigerator after a 12 hour rest, and after being rested for 4 hours at room temp first. The second pic is of the dough put into two loaves after resting at room temp for 5 hours. About another hour and a half of rising before the bake!  I'll be back in two hours with pics of the finished product.

Okay, back, bread is all done. Turned out nice. This sourdough starter sure gives you a huge payback for a little extra effort!
1st pic is after a shaped rise, just before being popped in the oven. Loaves got slashed, rubbed with olive oil and doused with sea salt. Last pic is hot out of the oven!

Wife is the baker in this house, and a damn good one at that.  She has had sourdough starters in the past, all from King Arthur Flour, BUT, I'm pre diabetic (just diagnosed) and have always been VERY carb intolerant.   She got tired of baking things I couldn't eat, and giving it all away, so we have it no longer.   Anything sourdough is great in my opinion, we just can't consume, freeze or give away enough any more to make it worthwhile.   But for those of you who can handle it and keep it going, more power to you.
