Title: I may have blown it badly
Post by: Pam Gould on March 29, 2014, 12:52:42 PM
I am using my cloche that I couldn't stand after seeing the other ones on this forum. I used a standard white loaf of bread form my 1st bread machine. I have 2 more, gave one to grand daughter. Anyway I put it in the cloche after seasoning it 3 times. It's rising beautifully and I put a pan of steaming water under it in a ss pan. I slashed my loaf with my lame' it's for cutting slashes in bread and had a straight razor blade in it. I'm sure you guys remember straight razors. After putting the cloche in oven I then put the lid on and this is where I blew it. I forgot to check the height of the cloche and it smushed the top of my loaf some. I resprayed  the top with  a water bottle and , let's cook it. We shall see what happens. Cross your finners. I use my rack puller for everything in the oven..it keeps me from burning myself.
Here is the finished loaf that didn't rise after I accidently punched it down and the cloche needs more seasoning. But the taste is great.

Thanks LV..I was going for texture and it is nice and soft like bread from the store. I know it's the butter and dried milk I added to it.  I will take care of the rising thing myself. I think I like this cloche, after more seasoning.   .☆´¯`•.¸¸. ི♥ྀ.

Looks like it turned out good to me, try dusting the bottom cloche with flour for the next 3-4 loaves and it should be perfectly seasoned, I don't oil or dust mine anymore after that, but I also don't rise my dough in the cloche like you did so I'm not sure how that would affect the sticking.
