Title: Shake & SPice Braai Salt Chicken!
Post by: teesquare on May 23, 2012, 10:51:49 PM
Typical chicken thighs - skin on, dusted a light amount of the Shake and Spice Braai Salt from Ahron, and immediately put them in the Yoder pellet smoker at 200F for 20 miutes, then raised the temp to 600F

BTW- muebe: They shipped me the newest revison of software and another fan, heat deflector and burn pot WOW! what a diiference - she really hits 600F now!)

The actual internal temp of the chicken hit 170-175F, and it was extremely juicy and had bite-thru crispy skin!
A nice amount of smoke flavor ( cherry and mesquite pellets) and a bit of a smoke ring.

And the flavor is a nice salt, garlicy - earthy - savory taste that is great on chicken!

Tee from what i understand new fan replaces the old fan with the incorrect CFM rating. Between that and the new software revision you ought to see much better performance from your Yoder. Nice to see a company improving their products ;)

Chicken looks fantastic! Looks like the salt really gave that skin a real nice color :)

Thanks Mike!

Muebe: Well..it is even more than a replacement fan. It is a second fan. By that, I mean that there is a housing that they sent me that the original fan gets placed in, and that is placed such that it focuses the air thru the burn pot ( which is a new one - redesigned) , and acts to prevent "back-burn" into the hopper. They also sent a new heat deflector -
The new fan is placed in the original fan location. The software up grade really makes a big difference. I had not kept up with all of the up-grades, because I was pretty happy with the overall performance - but WOW....I mean - more smoke, faster heat up, higher temps.

I will do some  more cooking this weekend on the Yoder, and take some pictures of heat up, and the smoke out-put. Before -I have been a firm"critic" that pellet grils/smokers could not produce enough smoke for my tastes. BUt THIS thing does now! Not over-smoked by any means - but, just a nice, light - but clearly present "cooked over a wood fire" taste. REAALLLLYY Happy with the Yoder.

Tee the newer units have two fans already so yours is getting that update. The newer ones had the wrong CFM fan and was causing problems but those were replaced also.

You should get much more smoke output with the software update. I believe the fan will pulse like my Memphis to generate more smoke with the new update.

The smoke output is genuinely, noticeably increased -I love it. Not sure about the fans pulsing or not - but I do know that it is cooking better than ever!

Just put one in a marinade using my new Grilled Meats Ru...Will post some pics ;)

In the mean time...Here are some pics from the 2nd time in a week that I used the Braai Salt... Like it a lot!

I sauced these near the finish with Old Mule. It is a local sauce that is tomato-molasses-smokey-thick with a little kick. Like a better K.C. Masterpiece....

The potatoes are skins on, rustic mask with garlic, dill, chives and cracked pepper. Added butter, shredded cheese, and salt of course ;D

The "blue box mac and cheese on drugs" - I need to do a thread on these.Awesome... No milk - subbed cream cheese, pimento and cheese - and parmesan. Topped with chopped chives

Feel lucky.... I can only find Tri's at one place and they are Prime and cost 10.00 a pound.  I usually get 3/4 at a time.

I've seen two tri-tips locally here at a Wally world. Didn't get them. I have never seen them again. ???
We do have some local meat markets around where I could probably get them. Wonder how much they would be
