My Wife cooks the week-end

I have had my hip and leg hurting since last Tuesday. Thursday it was better so put off going to the Dr. and did up 4 rolled flank steaks on my smoker. Friday I managed to do a flank steak on my gas grill for supper. Later in the evening the leg was hurting bad enough I thought I should have went to the Dr.

Saturday I could hardly walk far before I had to sit down. I told my wife she would have to cook. I think most know when it’s her turn to cook we go out or she gets carry ins! It would have to be carry ins. We ate Bob Evans.

Today my leg has been better but I have to go to the Dr. tomorrow. For our supper she had broasted chicken from Sandman’s carry out. We get it a lot on Sunday’s anyway; he runs a special of 8 pieces for $6.50 you can’t do it yourself for that. Whenever I want crispy fried chicken I get it from him as it is always good. So my supper tonight was two wings and a thigh along with some leftover mashed potatoes and butter, some of my green tomato pickles, bread and butter.

I might not be in here for a while but as soon as I get the leg fixed up I’ll be back cooking!

Isn't it great that the marriage "system" works both ways?  My wife would do the same thing.  Since I have been cooking for so long she claims that she only cooks a couple of times a year.  This is true, too.

I have had broasted chicken several times. But never bothered to find out how it is made. Anybody know the technique/equipment for this?

Pappy....It is chicken that is marinated and breaded and deep fried under pressure. Patented in the 50s and only sold to restaurants. You can do it in a pressure cooker with 2 inches of oil but at your own risk. Marinate it......Batter it.....then
cook it skin side down in an open pressure cooker for 5 minutes in 375 degree oil........then put lid on and pressure cook for 8 minutes. Again at your own risk.

I would never attempt this with an ordinary pressure cooker, use one that is designed for pressure frying.  ;)

Don, the leg and hip pain are often related to degenerative arthritis in the hip (I am a retired M.D., doesn't mean I know everything, but this might be of some help. ) .  I had a hip replacement a year ago, anterior approach, was out of the hospital in 24hr.s and full recovery in 4 wk.'s.  I have been doing great ever since.  Good luck, I know your pain.
