I don't know how it would work with other salt. I wanted rock salt because of the large surface area (heat retention), will be absorbed less by the meat, and I figured this salt was more likely food safe then salt for water conditioners. It was $2 for 4lbs of salt.

All the salt was heated before being placed on and around the meat.
