Freezer Meal Fiesta!!

Lots of pics from this weekend, my Saturday was one multi-tasking blur!  We have friends with a 1 month old baby, and our neighbor is going through her second round of chemo, so thought I'd stock them both up with some freezer meals again this month. 

Started the day off by pulling the pork roasts I'd smoked overnight.  I helped myself to some for breakfast while I was at it.... not a bad way to start the day, I'll tell ya! 



Made a coconut curry shrimp dish to be served over rice or noodles


Quiche made with duck eggs, cheese, spinach, and two types of sausage




Ingredients for twice baked sweet potatoes with shredded buffalo chicken, bacon bits, and goat cheese (OK this stuff is SO stinking tasty... in full disclosure, we kept all of these ones for ourselves!!!)  Of course, I lost half the potatoes to a sneaky golden retriever so I could only make a couple...




Garnished with some smoked bacon bits, cilantro, and a drizzle more buffalo sauce and bleu cheese....  NOM NOM NOM



Shepherds Pie!



Last up was smoked tuna casserole with homemade alfredo sauce,



The poor old girl, all tuckered out from too many pans to pre-wash (I like that she's got a washcloth in her paws for this shot!).  Or maybe just tired from jumping on counters and stealing all my sweet potatoes. 




Not too bad for one day!!   



This one's mom and dad will be well fed this month!

That sweet potato thing looks great, and I don't even like sweet potato.  :D
