That's a beautiful steak!  I like mine on the rare side, so cut my steaks to 1.5 inches as well.  That way I can sear my wife's for a longer time and both of us are happy.  Another method is to sous vide to the rare side, then sear, again to preference.  Interestingly, I like sous vide steak medium rare, but traditional sear blood rare.

I like mine more rare as well. Lucky for me, my wife has similar taste as does my youngest daughter. But the older daughter (I still suspect the milk man) likes her's medium well to well...  ???

I haven't taken the sous vide "plunge" yet. With two teen agers at home, planning 10 or more hours in advance is just not practical. Someday.....
