First of all, I cannot take credit for the following cakes. I wish I could, but I can’t. Last August I was approached by my college fraternity to help establish a new colony at Johnson and Wales University in Charlotte. I accepted the role of liaison to the University for the next two years. Most of the members are in the culinary arts program. Some specialize in becoming the chef's of tomorrow. Some become the pastry chef’s of tomorrow. Others become sommeliers of tomorrow. Still others go into hotel management. They are all focussed on what they want to be. I am jealous! I wish this had been available to me many years ago. I get to interact with them quite a lot. Needless to say, they make me feel young!! The good news is, I have a lot of credibility with them because they get to taste a lot of the things I am trying to prepare. The President of the Colony said to me several weeks ago that he was glad that they had someone who knew how to cook. I had prepared 15 quarts of elk chili and two pork butts that I pulled. Needless to say, none went to waste.
One of the young officers I advise prepared the following two cakes in his pastry class. I just had to share them with the LTBBQ Forum.
The first cake is a Black Forest cake.
The second cake is a Chocolate Pistachio tort.
Unfortunately, I have not been able to taste either one. They do pass the “EYE TEST”, however.
