Real, active culture yogurt can be an almost magical ingredient, especially when used in the marinading of proteins. Great on poultry for sure!
If you use it on mutton, goat or any venison, it will help to tame any gamey smell and taste.
Ask ACW3 ( Art ) about the old goat hind quarter that we cooked for a father's day event at a Farmer's Market......it was a mild as pork, and a texture like pulled chuck. People could not believe it was goat.
