Rocky and her friend asked me to make cheese fill tortellini tonight. For fun I made the noodles red, green and white (used some beet juice, tomato and spinach.) I also made an alfredo (they asked for that) and red sauce.

Added some salad... It was dinner....

I prefer Alfredo but would take either. Heck some really good garlic infused EVOO would work too.

It's really pretty simple - just add spinach or tomato / beet juice to color the pasta and make the tortellini as normal. It just makes it more fun for the girls.

Well I have a manual pasta maker and should use it more often. I do find it a bit of work - but nice that you go to the trouble to make it for them. My best work was some shrimp filled ravioli I made for the wife as a welcome home meal after a trip to see relatives. Made them with a vodka sauce.
