Got some cherry and mesquite small logs burnt down to coals. Let's do some Chikin

Started at 400 degrees.

Chikin on

45 minutes later and right on time.... Coals running out

Let me show you the back! Chikin was never touched after hitting the grill. Even cooking all around.

That's good Chikin!!

Long live SnS!!

Another all wood cook on the SnS.
Last time wasn't a fluke. I'll prove it to you........

Mesquite wood burning

We're ready to cook... What's on the menu? Meatballs

Thirty minutes in...

We're done here..

Just in time, 55 minutes.

Some went with sauce

Best Meatyballs ever!

Didn't take as many pictures because it was drizzling.

You are killing The Smoke with these grubalicous offerings of yours. While it takes time to burn splits down to charcoal, the time is well worth the finished product  8) 8)

I totally agree. And you don't need much.
After cooking with all wood, you start looking at briquettes kind of funny.

You are straight killing it.

Do you start your wood splits the same in the chimney as you would briquettes? I have been trying to use just wood chunks a lot more, but feel I need to have some, a hand full or two... maybe 10 total briquettes to help get it started.

Yep, start in chimney. You can use briquettes to speed up the process. But I don't, just straight wood.
I'm using Western fire starters. They look like triangular bricks.

Never heard of Western fire startes..got a pic? I use the Weber charcoal starter which are lil white cubes. They work great, just have to make sure they are burnt before you use the charcoal which is no problem. I have the curved baskets from Weber and I like them..also using a medium Vortex which is doing the same without the water pan added. I do like your S &S a lot tho. I cook indirect all the time too. I learned not to turn the food with a spatchcocked chicken.  .☆´¯`•.¸¸. ི♥ྀ.
