Yep, start in chimney. You can use briquettes to speed up the process. But I don't, just straight wood.
I'm using Western fire starters. They look like triangular bricks.
Never heard of Western fire startes..got a pic? I use the Weber charcoal starter which are lil white cubes. They work great, just have to make sure they are burnt before you use the charcoal which is no problem. I have the curved baskets from Weber and I like them..also using a medium Vortex which is doing the same without the water pan added. I do like your S &S a lot tho. I cook indirect all the time too. I learned not to turn the food with a spatchcocked chicken.  .☆´¯`•.¸¸. ི♥ྀ.

I used to use the weber cubes as well then I tried these. They flame for about 20 minutes, perfect for logs.

I am gonna try them..just found an Academy sports in Alta Monte springs..am going to Florida for a month, leaving next week..there will be shopping involved, OH poor me..lol....No AS in Ohio. I wonder if Lowe's or Menard's carry them? our HD left us.  .☆´¯`•.¸¸. ི♥ྀ.

Academy is where I get them from. I've never seen them anywhere else.

SnS ribs!!!!! I was flying blind with this cook. Tried to turn my maverick thermometer on and it refused to come on.



2 hours in.




Ribs are done!



They didn't make it far. Turned out fantastic!!!!

Was about to fire up the KBQ for some low and slow then it started raining. Then I fired up the SnS for some hot and fast. Oak and cherry wood mini logs







Then we ate....

Beautiful color on that cherry wood cooked chicken. Got any pictures of it after you sliced into it? I have found that cherry gives the nicest smoke ring, and overall color to the outside to.

100 times better. I threw my smokenator away in the middle of my first SnS cook.

Good luck searing on a smokenator.
