Bacon, Sausage and cheese stuffed rolled pork

The pig trifecta!

I bought some butterflied pork chops, and pounded them flatter.
I used store bought sourdough stuffing mix, then added bacon and sausage.

I rolled the pork with the stuffing and some provolone cheese. Secured with those high temp cooking bands.

Browned on the stove top, then finished in the oven.

Made a delicious pan sauce and Yukon gold taters.

Verdict: dang this was good. I usually find with these type of meals that the meat suffers at the expense of the stuffing. Not in this case. Just fantastic.
